Citrus Vinaigrette Dressing

Ingredients:
Juice of one large navel orange
2 tablespoons lemon juice
1 teaspoon sweetener
1 clove garlic, crushed

2 tablespoons Balsamic vinegar
Dash of salt
Fresh ground black pepper
1/4 teaspoon dry mustard

Honey Lime Yogurt Dressing

Ingredients:
3/4 cup plain low-fat yogurt
2 tablespoons lime juice
1/4 cup honey
1/4 teaspoon lime zest

Whisk all ingredients together and chill for one hour.

Place in blender and blend until smooth. Refrigerate, covered overnight to let
flavors blend.

Sugar Free Honey Mustard Vinaigrette

Servings: 8

Ingredients:
1/2 clove garlic
1 teaspoon of sweetener
1 tablespoon coarse-grain mustard
1 tablespoon red-wine vinegar
1/4 cup extra-virgin olive oil

Mince garlic with a large heavy knife, then mash to a paste with sweetener using
flat side of knife.

Whisk together mustard, vinegar, and pepper, then add oil in a slow stream,
whisking until emulsified.
